The reds are all destemmed and go through three successive sorting stations to keep only perfectly ripe and healthy grapes

grapes are currently destalked for the red and foot trodden in open vats (but from 2019 all their wines will be made from whole bunches)

Archabbey Pannonhalama, Hemina White, Pannonhalama, 2018 Dalamara well-balanced with an elegant finishThe Hemina was the amount of wine the monks of Abbey Pannonhalama (and other monasteries across medieval Europe) were allowed to drink each day, despite being supposedly teetotal. This blend of Viognier, Sauvignon, Chardonnay and Pinot Blanc has a floral, herby lime and citrus nose. The palate is nicely creamy, a touch smoky with some honey and stone fruit finishing dry and mineral.
